Four Spices (quatre Epices)

Mix, then grind in a spice grinder or coffee mill, then re-mix. Store in an airtight container, keep in a cool place away from light. Muchly used in French charcuterie and with slowly cooked meat and poultry dishes.

Herbs De Provence Spice Mix

Combine all ingredients. Mix well and spoon into small jars. Makes 3/4 cup. Use to season chicken, vegetables or meat.

Zippy Cheese Spread

Beat all ingredients except toast rounds in small mixer bowl (cheese bits will remain in spread). Serve with toast rounds.

Zesty Burgers

Mix all ingredients together. Shape mixture into 4 patties, each about 3/4-inch thick. Broil or grill patties 4-inches from the heat, turning once, to the desired doneness, about 10 to 15 minutes.

Yogurt Tomato Cooler

Heat oil in a small saucepan. Add garlic and cumin seeds and cook very gently 2 minutes. Remove from heat and cool. In a bowl, combine cooled garlic mixture, yogurt, paprika and stir well.
