Ingredients:
2 lb Zucchini
1 sm Green pepepr -- chopped
1 sm Onion -- chopped
1    Clove garlic -- minced
1 ts Salt
1/4    Pepper
4    Tomatoes -- peeled and
Chopped
2 tb Butter
2 tb Minced parsley

Cut zucchini into 1/4-inch slices. In slow-cooking pot, cimbine zucchini
with green pepper, onion, garlic, salt, and pepper. Top with chopped
tomatoes, then butter. Cover and cook on high for about 2 hours or until
tender. Sprinkle with chopped parsley.
