Ingredients:
2 c  Cooked chitterlings
(chitlins) -- in sm. pieces
Juice of 1/2 lemon
1/2 c  Diced celery
1/2    To 3/4 cup
Salt and pepper -- to taste
Lettuce
Paprika
Mayonnaise

Sprinkle the chitterlings with lemon juice and let stand for at least 1
hour. Add celery, mayonnaise, salt and pepper. Serve on beds of lettuce.
Dust with paprika. yield: 2-3 servings
