Picante Potato Salad

Combine potatoes, corn , pepper, and onions in medium bowl. Combine picante sauce,oil, vinegar, cumin and salt; mix well. Gently toss with potato mixture; chill. Sprinkle with cilantro,and serve with additional picante sauce.

Apricot Salad

Combine pineapple,water, sugar and bring to boil. Add jello and blend well. Put in large dish in refrigerator until set. Cream cream cheese at room temperature and milk and beat into jello mixture. Let set again. Then blend cool whip into the mixture and let set again. Make night before. Serves 10 – 12.

Pasta With Fresh Basil, Tomato And Parmesan

Cook pasta in 4 qts boiling water until very al dente. Drain and toos with olive oil and lemon juice. Cool to room temperature, occasionally stirring the pasta to coat throughly. Add chopped basil, tomatoes, cheese and salt and pepper to taste. Mix throughly but gently. Garnish with basil leaves.
