Combine all ingreds., except lettuce, eggs and shrimp. Chill. Place shrimp on plate of shredded lettuce. Pour remoulade over shrimp and garnish with eggs.
Sauerkraut Salad With Yogurt Dressing
Rinse and drain sauerkraut; chop coarsely. Wash grapes and cut in half; remove seeds if desired. Cut ham in julienne strips. Gently mix these 3 ingredients. Blend dressing ingredients and stir into sauerkraut mixture. Marinate for 10 minutes; adjust seasoning before serving, if necessary.
Friday Sea Shell Salad
Combine all ingredients with the exception of the lettuce. Chill before serving. Serve on lettuce. This salad can be made with any of the listed seafoods, if all are not available.
Italian Vegetable Salad

Persimmon Salad
Cut persimmons into quarters, almost to the stem end, and spread apart. Place on a bed of lettuce. Combine pears, grapes and pineapple and mound within the persimmons. Sprinkle each one with 1 teaspoon pine nuts and 1 teaspoon walnuts. Serve with the mayonaise.
