Chunky Kidney Bean Dip

Mash the beans by hand, using a fork or the back of a wooden spoon. Blend in the sour cream, mixing until smooth. Add all the other ingredients and blend well. Cover and chill. Makes about 1 3/4 cups of dip. SUGGESTED DIPPERS: Polish Sausage, Celery, Corn Crackers

Herb-roasted Potatoes

Heat oven to 400-degree F. Mix all ingredients in shallow baking pan; arrange in single layer. Bake 45 minutes or until potatoes are tender and golden brown, stirring occasionally. Makes 4 to 6 servings. *NOTE: the salad dressing should be PREPARED.

Combine potatoes, corn , pepper, and onions in medium bowl. Combine picante sauce,oil, vinegar, cumin and salt; mix well. Gently toss with potato mixture; chill. Sprinkle with cilantro,and serve with additional picante sauce.
