Corned Beef Salad
Combine first five ingredients. Dissolve lemon Jello in boiling water. Dissolve unflavored gelatin in cold water, and when dissolved, add to lemon Jello. Mix in remaining ingredients. Add first five ingredients and pour into a pan. Refrigerate until firm. Makes 12 servings.
Apple Cider Salad
Dissolve gelatin in 2 cups hot cider; stir in raisins. Let cool. Add remaining 2 cups cider; chill until consistency of unbeaten egg whites. Stir in chopped apples, celery, lemon juice and rind. Pour into a lightly oiled 6 cup mold. Chill until set. Unmold onto lettuce leaves and garnish with apple slices, if desired.
