Cucumber Dressing

Halve the cucumber lengthwise, removing the seeds and then cut the cucumber in pieces. Add to a blender container that contains all of the rest of the ingredients and blend until the cucumber is finely chopped. (When necessary, stop the blender and use a rubber spatula to scrape down the sides.) Makes 2 cups.

Pistachio Salad

Mix pudding, crushed pineapple and juice together. Add marshmallows. Add Cool Whip. Add sufficient nuts to topping. Mix well and refrigerate. Randy Rigg

Pasta Salad Dressing

Combine all ingredients in a jar, and cover tightly. Shake vigorously until well mixed. Yields 1-1/4 cups.

Gingered Cabbage-beet Salad
