Rum Balls

Crush vanilla wafers very fine. Blend in 1 cup powdered sugar, cocoa and nuts. Mix syrup and rum. Add to wafer mixture and let stand 30 minutes. Form into small balls and roll in additional powdered sugar. Store in airtight containers.

Peppermint Filling

Blend 3 Tbls. cream & 1/4 tsp. peppermint extract into 2 cups confectioners sugar.

CAKE: For cake, mix flour, sugar, eggs, vanilla, baking soda, pineapple and nuts. Pour into prepared 9 x 13 inch cake pan. Bake at 350 degrees for 1 hour. For frosting, with electric mixer thoroughly combine cream cheese, butter, sugar and vanilla. Set in refrigerator. Frosting will become white.
